Glucidele lor scad foarte putin nivelul de zahar din sange la sfarsitul unei mese. Fibrele din grau, dar si cele din graul Khoroson si alac sunt cele care activeaza tranzitul. Cele din ovaz si din orz impiedica o parte din grasimile ingerate in timpul meselor sa se depuna si ajuta la reducerea colesterului sanguin. Alaturi de cerealele mai albe, cerealele integrale ajuta un tub digestiv mai slab si mai fragil.<\/span><\/p>\n<p><span style=\"line-height: 1.5em;\">Cerealele integrale sunt si o buna sursa de proteine. Calitatea acestori proteine este insa optimizata atunci cand acestea sunt asociate cu lapte, cu carne, cu peste sau cu unele leguminoase, cum ar fi lintea, mazarea sau soia.<\/span><\/p>\n<p><span style=\"line-height: 1.5em;\">Dar persoanele care sufera din cauza unei boli celiace trebuie sa nu consume alimente care contin gluten. Adica o proteina care este prezenta in faina de grau, de alac, de ovaz, de orz sau de secara. Este vorba despre o afectiune a mucoasei digestive care complica destul de serios prepararea meselor.<\/span><\/p>\n<p><span style=\"line-height: 1.5em;\">Reintoarcerea in forta a cerealelor precum quinoa, mei sau hrisca le ofera insa o mai mare diversitate.
